Event on the gastronomy of al-Andalus

The Three Cultures of the Mediterranean Foundation has scheduled a new talk for Thursday 23 October as part of its al-Andalus Chair series, entitled "The cuisine of al-Andalus. The flavours of al-Andalus that linger in our memory." The lecture will be given by Francisco de Borja García Duarte, a renowned expert in medieval history and author of the book of the same name.

This cultural event invites you to discover the culinary richness of al-Andalus with a journey from the sophisticated banquets of the emirs and caliphs to the most traditional and popular recipes whose influence remains alive in contemporary cuisine. Attendees will discover how Andalusian cuisine was a melting pot of flavours resulting from the mixture of Hispanic-Roman heritage and Eastern sophistication introduced by the elites to emulate the court of Greater Syria.

Exploring the enduring Andalusian cuisine in our culture

To carry out this research, Francisco de Borja García Duarte consulted a wide variety of sources, including scientific and poetic texts from the period, as well as treatises on hisba, which regulated the administration of the souk, and Andalusian recipe books from the 13th century. In this way, a complete picture is reconstructed of the gastronomic influence that survives in many modern Spanish dishes.

The event will take place at 7:00 p.m. at the Fundación Tres Culturas del Mediterráneo. Admission is free, but advance registration is required. This is a unique opportunity to immerse yourself in the history and flavours of an era that can still be savoured today.
